Unlike store-bought versions, these gummies are free from artificial sweeteners and corn syrup—just pure, immune-boosting goodness!

They store well for 2-3 weeks in an airtight container, making them a convenient natural remedy to have on hand during the winter months.

In this post, I’ll take you step by step through making elderberry juice, infusing your coconut oil, and whipping up your own gummies. I love using some awesome gadgets to make things easier, but don’t worry—I’ll also show you how to do everything without fancy tools, so you can still get great results no matter what you have on hand!

Why Elderberry Gummies?

Elderberries (Sambucus nigra) have been used in folk medicine for centuries. They’re rich in vitamin C, packed with free radicals-fighting antioxidants, and one of the most common ways to support respiratory infections and autoimmune diseases naturally.

But elderberries aren’t the only powerhouse in these gummies!

The Benefits of Ginger & Echinacea

To infuse the coconut oil, I used ginger and echinacea, which add extra immune-boosting benefits:

🌿 Ginger: A natural anti-inflammatory, ginger helps soothe sore throats, ease nausea, and support digestion. It’s also known to help fight off infections and reduce inflammation in the body.

🌸 Echinacea: Traditionally used to help the body fight off colds and flu, echinacea is known for stimulating the immune system and reducing the duration of flu symptoms.

Ingredients You’ll Need

Main Ingredients:

✔ ½ cup gummy mixture (grass-fed gelatin powder or agar agar for vegan elderberry gummies)
✔ ½ cup elderberry juice (homemade elderberry syrup recipe or store-bought)
✔ 2 tbsp infused coconut oil (see Step 2)
✔ (Optional) ¼ cup raw honey or maple syrup for added sweetness

For the Infused Coconut Oil:

✔ 2 tbsp coconut oil
✔ 1 tbsp dried echinacea
✔ 1 tbsp fresh or dried ginger

Tools:

✔ LEVO Infuser (for easy oil infusion)
✔ Small saucepan (for elderberry juice or stovetop method)
✔ Small bowl
✔ LEVO Gummy Mixer (or stovetop method)
✔ Silicone molds (gummy bear molds are fun!)
✔ Airtight container (for storage)

Step-by-Step Guide to Making Elderberry Gummies

Step 1: Make Elderberry Juice (If Needed)

If you don’t have elderberry juice ready, making it from dried elderberries is an easy way to get the most health benefits.

  1. In a small saucepan, combine:
    • 4 cups water
    • 1 cup dried elderberries (raw elderberries work too!)
  2. Simmer over medium heat for 30-45 minutes.
  3. Strain out the solids, keeping only the juice.

Step 2: Infuse the Coconut Oil Using the LEVO Infuser (Main Method)

The LEVO Infuser is the easiest way to make perfectly infused coconut oil every time.

  1. Add 2 tbsp coconut oil1 tbsp dried echinacea, and 1 tbsp fresh or dried ginger to the LEVO Infuser.
  2. Set the temperature to 160°F and let it infuse for 2-3 hours.
  3. Once done, strain the herbs and store the oil in a sealed jar.

📌 Why the LEVO Infuser? It keeps the temperature precise, preventing overheating, and extracts the maximum benefits from medicinal herbs in less time than slow infusion.

Alternative Oil Infusion Methods

If you don’t have a LEVO Infuser, you can still infuse the oil:

Stovetop Method (4-6 Hours for Full Infusion)

  1. In a small saucepan, add:
    • 2 tbsp coconut oil
    • 1 tbsp dried echinacea
    • 1 tbsp fresh or dried ginger
  2. Heat over low heat for 4-6 hours, stirring occasionally. Do not let it boil.
  3. Strain out the herbs before using the oil.

Slow Infusion (No Heat Required)

  1. Add herbs and coconut oil to a jar and let them infuse at room temperature for 2-3 weeks.
  2. Strain before using.

Using gummy mixer to blend ingredients

Step 3: Mix the Gummy Base in the LEVO Gummy Mixer

  1. In a small bowl, whisk together:
    • ½ cup elderberry juice
    • ½ cup gummy mixture (grass-fed beef gelatin or agar agar)
  2. Pour the mixture into the LEVO Gummy Mixer.
  3. Run the first cycle to fully dissolve the ingredients.

Step 4: Add Infused Coconut Oil on the Second Cycle

Once the first cycle is complete:

  1. Add 2 tbsp infused coconut oil into the gummy mixture.
  2. Run the second cycle to blend everything smoothly.

This ensures even distribution of the natural immune support from the herbal remedies.

Alternative Stovetop Instructions

If you don’t have a LEVO Gummy Mixer, you can use the stovetop method instead:

  1. In a small saucepan, heat ½ cup elderberry juice over low heat.
  2. Slowly whisk in ½ cup gummy mixture (gelatin powder or agar agar), stirring constantly to prevent clumping.
  3. Continue stirring over low heat until completely dissolved. Do not boil.
  4. Remove from heat and let cool slightly.
  5. Stir in 2 tbsp infused coconut oil (and optional honey or maple syrup if using).

Pouring gummy mixture into molds

Step 5: Pour Into Molds & Let Set Overnight

  1. Carefully pour the mixture into silicone molds (small molds like gummy bear molds are perfect!).
  2. Next, place them in the refrigerator and let them set overnight before removing them from the molds.

📌 Note: I prefer to let them set overnight instead of just a few hours—it makes them firmer and easier to remove!

Final Steps: Storing & Enjoying Your Gummies

  • Once firm, remove the small gummies from the gummy molds.
  • Store them in an airtight container in the fridge for up to 2-3 weeks.

For best results, take 1-2 gummies per day as a natural remedy during the cold season.
