A delicious, immune-boosting gummy recipe made with elderberry juice, echinacea, and ginger-infused coconut oil. Perfect for flu season!

Ingredients

Elderberry Juice:

  • 1 cup dried elderberries (or 1 ½ cups fresh)
  • 4 cups water

Infused Coconut Oil:

  • 2 tbsp coconut oil
  • 1 tbsp dried echinacea
  • 1 tbsp fresh or dried ginger

Gummy Mixture:

  • ½ cup elderberry juice (from above)
  • ½ cup gummy mix (grass-fed gelatin powder or agar agar for a vegan option)
  • 2 tbsp infused coconut oil (from above)
  • (Optional) ¼ cup raw honey or maple syrup for sweetness

Instructions

Step 1: Make the Elderberry Juice

  1. In a small saucepan, combine dried elderberries and water.
  2. Bring to a simmer over medium heat and let cook for 30-45 minutes.
  3. Strain out the solids, keeping only the juice. Set aside.

Step 2: Infuse the Coconut Oil

LEVO Infuser Method (Recommended):

  1. Add coconut oil, dried echinacea, and ginger to the LEVO Infuser.
  2. Set to 175°F and infuse for 2-3 hours.
  3. Strain and store the infused oil.

Alternative Methods:

  • Stovetop: Heat on low for 4-6 hours, stirring occasionally. Strain before use.
  • Slow Infusion: Let sit at room temperature for 2-3 weeks before straining.

Step 3: Make the Gummy Mixture

LEVO Gummy Mixer Method:

  1. In a small bowl, whisk together ½ cup elderberry juice and ½ cup gummy mix.
  2. Pour into the LEVO Gummy Mixer and run Cycle 1 to fully dissolve.
  3. Add 2 tbsp infused coconut oil and run Cycle 2 to mix thoroughly.

Stovetop Method:

  1. In a small saucepan, heat elderberry juice over low heat (do not boil).
  2. Slowly whisk in gummy mix, stirring constantly to prevent clumping.
  3. Remove from heat and stir in infused coconut oil (and honey or maple syrup if using).

Step 4: Pour & Set the Gummies

  1. Carefully pour the mixture into silicone molds.
  2. Refrigerate overnight for best results.

Step 5: Store & Enjoy!

  • Pop gummies out of molds and store in an airtight container in the fridge.
  • Keeps fresh for 2-3 weeks.
  • Take 1-2 gummies daily for immune support.

  • Vegan Option: Use agar agar instead of gelatin.
  • No Special Tools? You can make everything on the stovetop with a whisk and saucepan.
